Hello guys, welcome to another post, so today am going to be showing you how to make egusi soup, some call it melon soup. Egusi soup is a Nigerian soup and delicacy that is very popular and often found on most restaurants in Nigeria and also in African kitchens abroad, wondering why it’s so popular?? Wonder no more, this soup is so delicious and can be made in so many ways.

Just imagine yourself right now with a plate of pounder yam with egusi soup and a cold bottle of water, chai that is deliciousness personified guys, so enough said let’s get to cooking. You will be needing the following for a family of four

Ingredients

3cups of melon seeds (grounded)

Beef

Cow skin

3tablespoon crayfish

Palm oil

Salt

Stockfish

Washed bitter leaves

Seasoning cubes

Tomatoes

Peppers

Onions.

Directions

Egusi Soup RecipeFirst we are going to boil your beef, stock fish and cow skin for twenty minutes with some onions, seasoning cubes and salt.

Now take you ground melon seeds and add about 4tablespoon of water to make a very thick paste, then set aside now blend your tomatoes, peppers and onions to a smooth paste and set aside as well.

Now take a clean pot and plate on your cooker pour in about 3cooking spoons of palm oil and allow it to heat up a bit and release some smoke, say about 3minutes, don’t worry your house won’t burn. Pour your melon paste into the oil and fry while constantly turning it to prevent burning, we want it to get fried and dry buy not burnt so make sure your cooker is set on medium to high heat, once you start to see the oil shinning on top add in the tomatoes paste about 2cooking spoons and mix into the melon, now continue stirring till they are well Incorporated and allow this to fry till you see the oil on top again, yea I know it’s seems a lot but good food or in this case good soup takes a lot work.

Now that the oil is floating and shinning on top, pour in the meat with the stock and mix well, now add in your ground crayfish and cover to cook for 5minutes. I bet the aroma in your kitchen now is amazing!

Uncover your pot and taste to see if the salt and seasoning is right if not adjust to your taste and allow it to cook some more  till there is very little fluid in sight, that is the time you add in the bitter leaves and allow it cook for another 10minutes,turn off your cooker and open your pot to reveal this delicious soup, serve with your choice of swallow.

Breakfast Series - Fluffy Crepes Recipe1

Crepes are lighter forms of pancakes that can be folded or rolled up with any kind of filling that you like, it could be fruits, chocolate spread, eggs or even veggies.

Breakfast time should always be fun and easy just as they should be delicious and this is one recipe that is on a repeat in my kitchen.

The ingredients are similar to pancakes with the exception of baking powder, you can make this on the weekends and have the kids pick out their own kind of filling , and it’s a fun way to get the kids involved in the kitchen.

INGREDIENTS

1cup flour

11/2 cup milk

4tablespoon sugar

A pinch of salt

Nut Meg

1egg

2tablespoon butter (melted)

DIRECTIONS

In a large bowl combine all the dry ingredients together make a well in the middle of and add in all the wet ingredients, you want a watery but slightly thick consistency.

Take a non stick pan and rub on some butter or cooking spray and  place under low heat, scoop out your batter and pour into the pan ,allow to cover the pan and then when it starts to show bubbles on top , flip and cook the other side.

This process should basically take about a minute or so to cook both sides evenly. Repeat the same process for all of the batter ,till you are out of batter.Breakfast Series - Fluffy Crepes Recipe1

Fill your crepes with any filling of your choice ,you could just layer some chocolate spread on it  with a few fruit slices like strawberries and roll it out .

For my filling I used eggs fried with some cabbage, onions and peppers. Serve with baked beans and a delicious cup of hot tea , yummy all the way.

All the coconut lovers please raise your hands let’s know ourselves

Coconut is one of my favorite fruit to eat; you can pair it with soft hot bread, boiled corn or just eat it as a snack on its own! Sigh, it has so many nutritious health benefits which are why there is a recent hype to it, these days this is virtually nothing you can’t make with or from coconut.

Coconut Rice one yummy and equally cost effective meal that you can make which will satisfy the whole family, my secret to making it extra delicious and pocket friendly is by making the milk myself from fresh coconut, instead of buying the store packed ones.

For today’s recipe we will just be making use of the coconut milk and trust me this is so yummy and easy to prepare, even if it’s your first time you won’t get it wrong, so let’s get cooking.

INGREDIENTS

3cups of rice

4cups fresh coconut milk

Red chilly peppers

Tomatoes

Small onion

Green pepper

Salt and seasoning

2tablespoon ground crayfish

Vegetable oil 4tablespoon

Bay leaves

DIRECTIONS

Wash and parboil your rice for 10-12 minutes, strain and set aside.

Wash and slice all your veggies (tomatoes, peppers and onions ) , place a deep sauce pan on low heat and add in your vegetable oil, allow to heat up a bit then you add your veggies in no particular order.

Sauté the veggies for a few minutes, now it’s time to include your Bay leaves (3leaves is enough) salt and seasoning, leave to cook for three minutes and then add your coconut milk.

Once you have added your milk, leave to cook for five minutes, give it a good stir and taste to make sure your salt and seasoning is adequate, as this is the base for your coconut rice.

After five minutes, add in your rice, stir to incorporate and leave to cook for at least 15minutes or till the rice is cooked through and soft, by now I bet the aroma of the coconut milk is making you salivate, lol, allow the rice to dry of every liquid and serve garnished with some the green peppers and any side of protein that you like.

P.S the more pepper in this dish the tastier it is, but feel free to use pepper to your discretion.

To make the coconut milk, simply break open your coconut, remove the flesh and chop it into tiny bits, blend it with enough water in your blender and strain using a cheese cloth, yes it’s that easy.Yummy Coconut Rice recipe1

Breakfast Potatoes (easy and super delicious)

If there is a definition of what breakfast is, then I believe that this meal fits perfectly into it.

Breakfast should be easy to make yet filling, delicious and nutritious enough to start your day on the right path.

This recipe is very easy to make and it comes together in minutes, it’s also a one pot dish, which means you don’t have to do too much cleaning after wards! Isn’t that just amazing?

Let’s get cooking guys cos I know the picture is already making you salivate.

Ingredients

6 medium size Irish potatoes

3sausages

Half onion (medium size)

1green pepper

1clove of garlic

Salt

Seasoning

2 tablespoon vegetable oil.

Directions

Peel your potatoes and dice them up in bite sizes, wash and parboil with a pinch of salt for 3minutes.

While that is boiling, dice up your onions, green peppers, sausages and garlic.

Strain your potatoes and place under running water just to stop the cooking process.

Place your sauce pan on medium heat and add your vegetable oil, allow to heat up a bit and then add in your potatoes making sure there is enough room for all the potatoes to fry and brown without resting on another.

Once the potatoes are golden brown, add in your sausages as well as your onions, green peppers and garlic.

Stir to combine and add in your salt and seasoning, stir very well to incorporate all of the flavours and taste, cover and allow cooking for 3minutes.

Turn off your heat and stir very well, the aroma is simply divine. Serve as a main dish or with a side of bread for breakfast.
