When you think of Nigerian Meat pies you think of this rich pastry filled with minced beef, soft potatoes and carrots filling which you can down with a cold juice hmm that sounds so good right now. Meat pies are one of Nigeria’s most popular snack and won’t it be nice if you can just make this in your own kitchen? Yes imagine hot meat pie coming out of the oven and you can just sit and devour them, ok enough of the imagination let’s make some.
Meat pie dough
You will be needing the following
Butter 200 gms (one sachet of baking butter in Nigeria)
A pinch of salt
1cup ice cold water
1teaspoon baking powder
For the filling
1cup ground beef
1cup diced carrots
1cup diced potatoes
1cube seasoning (maggi)
A pinch of salt
Half teaspoon curry
Half teaspoon thyme
1small red onion diced
1tablespoon flout mixed with half cup water.
In a large bowl mix the flour, salt, baking powder together with your hands and then gently mix in the butter till well Incorporated and looks like breadcrumbs. Gently add the iced cold water little quantity at a time until you get a soft dough formed.
Transfer the dough onto a large floured surface and knead until it gets smooth and elastic this should take about 10minutes, once that is achieved place in a bowl and cover with foil and let it sit in the fridge for 30minutes while we make the filling.
Place a frying pan on low heat and pour in your vegetable oil, allow to heat up and add in the onions, sauté for two minutes and then add the beef, stir till it goes from pink to brown, then add your salt, seasoning cube, thyme and curry stir to incorporate. Now add in the carrots and potatoes with two cups of water and allow to cook till carrots and potatoes are soft and tender, then add in the flour paste stir and leave to cook until thickened, this will make the pie moist on the inside and not dry out.
Now bring your dough out from the fridge and roll out on a smooth and floured surface to about 1inch thick and cut out circles using a glass cup or a cookie cutter, gently roll out the circle and place one tablespoon of the filling inside the circle, now gently flip one side to cover the other and use a fork to mash the edges together, repeat same process till you are out of dough.
Break you egg in a small bowl and add two tablespoons of water to it and beat, now brush your meat pies with the eggs wash and place them on a floured baking sheet and baked in a pre-heated oven of about 250degree for 25minutes or until golden brown.
Allow to cool down, seriously allow it to cool down before you remove the baking sheet, now serve and enjoy with a cold drink.
