Hello to every of my blog readers, welcome to another blog post, you guys its been a while i posted here and this recipe was all the energy i needed to get back here, if you have been looking for a way to use your Irish potatoes this recipe is all you need, it combines all the ingredients of breakfast and it all comes together as a delicious dish that you and your family wont help but ask for more. Breakfast for me is a big deal and i see it as the perfect time to pour out all my love for my family through food, and as such i look out for certain things , i look out for how versatile the dish is, the burst of colors and a way to help my kids eat and love veggies and i also look out for meals that come together in a short time as its not every time you have the luxury of spending hours in the kitchen
Potatoes and sausage hash , is a delicious medley of succulent potatoes, mixed veggies , sausages cooked together with herbs and spices to give you an unforgettable breakfast or brunch experience, i am always looking for ways to spice up my meals and since am very heavy on breakfast this recipe came in handy.
I love recipes that help you make use of all the ingredients you already have in your pantry, this dish is one that will come together in a few minutes and fill the house with pleasant food aroma, you can easily switch up the veggies and use what you have in your pantry, you can also use sweet potatoes for a more savory taste.
Irish potatoes 5meduim sizes
Sausages 3 diced up
Green bell pepper
Yellow bell pepper
Carrots 2 medium sizes
Garlic and ginger
Thyme and Curry powder half teaspoon each
Salt and seasoning cube to taste
Vegetable oil 2 tablespoon
Scotch bonnet peppers
First thing you want to do is wash you potatoes clean and then peel the skin off and dice them into cube bite sizes and set aside as you can see in the picture picture.
Next you want to wash and dice up all the veggies and set aside, then in a medium sauce pan over medium heat, bring your potatoes to a boil with a pinch of salt till for about 5 minutes, it doesn’t have to be cooked through as we will still be frying this in hot oil.
Once your potatoes are cooked for 5 minutes, turn off your heat and drain over running water to stop the cooking process and set aside, then take a deep sauce pan and add in about halt a liter of vegetable oil and deep fry your potatoes till they are golden, this should take about 10 minutes on medium heat.
One thing i love about this meal is how easy it comes together and yet so beautiful, if you have been following me for a while you will know that i love meals that are very appealing to the eyes, cos the eyes have to feed first before the stomach, anyway lets get back to the recipe.
As soon as your potatoes look golden as you can see from the picture below, take them out of the oil and strain over a paper towel to help take out excess oil and set aside.
Next in a large frying pan add in about 2 table spoon of vegetable oil and add in finely chopped onions and over low heat allow this to sauté till soften, then add in garlic and ginger and allow these to sauté together over low heat and release all their flavors, this is one of the part of cooking that i absolutely love and the house smells so amazing.
Once the onion , ginger and garlic have softened, add in the diced sausages and allow to cook over low heat till it begins to brown a bit, and then you add in the diced up veggies, give this a very good stir to combine , and proceed to season with thyme and curry powder, next you add in salt and stock seasoning cube, stir to combine and taste to make sure it taste just right and leave this to simmer together for 3 minutes
This final stage is where you add in the potatoes that have been fried and set aside to drain, add this in to the veggies and sausage mix and combine properly , making sure every thing mixes well and all the flavors get into your potatoes, allow this to cook for about 4 minutes and your potatoes and sausage hash is ready.
