I love cookies, for me they are just the perfect in-between cakes and cupcakes; they are yummy, soft, chewy and insanely delicious, which is why you get to eat a lot without realizing it.
Every week I make a huge batch of cookies and just store up in the fridge for everyone including the kids to snack on.
This oatmeal cookies is so so delicious, it chewy, soft and fills you up that you won’t feel hungry for a long time, plus it’s so easy to make.
INGREDIENTS
1/2 Cup butter
1/2 Cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup rolled oats
1 1/2 Cup flour
1 teaspoon baking powder
3/4 cup raisins
DIRECTIONS
Line your baking sheet with parchment paper and set aside.
Cream together your butter and brown sugar until it’s light and fluffy, this should take about 10minutes, then add in your egg, vanilla extract and whisk till you get a creamy consistency.
Now add in your rolled oats and flour, mix together and gently fold in your raisins.
Using a spoon, scoop out some dough and place on the baking sheet, then press the dough down with your hand or spoon, repeat till your cookie dough is finished.
Bake in a pre-heated oven for 15 minutes at 180 degrees, once you can smell the cookies all over the house, it’s pretty much ready.
Bring out from the oven and resist the temptation to start eating them, allow them to rest for at least 15 minutes and you can enjoy.
