Nigerian fried Rice is a party must have, the special rice that is cooked on special occasions, trust me there is no Nigerian party without it , most Christmas day menus must have this yummy rice recipe in them , it just screams celebration and fun maybe cos of its vibrant color and the use of so many veggies, but either way its always a hit when prepared well.
There are so many variations to this meal , but the one am going to be sharing with you is the Authentic recipe i grew up to love and trust me nothing beats that!
To get it right you have to start by getting all the ingredients , one thing that makes the Nigerian fried rice unique and super delicious is the inclusion of cow liver , yes , the taste of liver in this rice makes all the difference and my hubby for one will never accept fried rice without it (laughs)
I always make sure that i have all the ingredient complete if am going to be making this dish, everything about preparing this meal is just so special , from slicing and dicing all the veggies to seeing the beautiful mix of colors and the aroma , then devouring the rice itself is like a ceremony and trust me when i say its all worth it, but if you cant handle the stress of cutting up all the veggies feel free to use store bought ones that have been cut already , although i must say it wont taste just the same, so lets get cooking already whew!
Rice 2 cups
chicken stock 1 1/2 cup
carrots 2 large ones
In a large pot , bring your chicken stock to boil, wash your rice and add to the chicken stock to cook till its soft but still firm,
wash up all your veggies and dice them up like the picture below, now combine them in a bowl and add some curry powder,salt and seasoning cube, give it a good mix and cover to marinate till your rice is cooked through.
Once your rice is cooked , bring a large sauce pan on medium heat and add in 3 tablespoon of vegetable oil, heat up a bit and add in your veggies with the liver, now increase your heat so that the veggies stir fry and not cook for about 2 minutes.
Once your veggies are looking nice and shinny add in your rice(already cooked in chicken stock) , give it a very good stir to combine everything , while you reduce your heat, taste for salt and seasoning and adjust accordingly, allow this to cook together uncover for 3 minutes and your delicious , authentic Nigerian fried rice is ready!!!
