In recent times there has been a huge trend of banana bread and its been so amazing to see what people come up with, bananas are super foods that are rich in nutrients and vitamins , but their shelf life is so short but the good news is that you dont need to toss that over ripe banana into the bin! You can bake it into something so yummy that you will crave for more.
Banana bread is such a yummy meal, it can be taken as breakfast, eaten during brunch and even as dinner with yogurt , the mere fact that you can turn something that was going to go to waste into something this satisfyingly is still amazing, there are so many recipes out there for banana bread, i will be sharing my own tested and trusted recipes that promises to deliver very moist, spiced and delicious bread. For my recipe you will not need baking soda, which i find as one of the ingredients in most banana bread recipes, you will just need basic ingredients that am sure you already have in your pantry or can source for easily.
4 RIPE BANANAS
2 CUPS ALL PURPOSE FLOUR
1/2 CUP BROWN SUGAR
2 TEASPOON VANILLA ETRACT
1/2 CUP ROOM TEMPERTURE BUTTER
1 TEASPOON NUTMEG
1 TEASPOON CINNAMON
2 TEASPOON BAKING POWDER
First you will mash the bananas into a puree using a whisk of a fork , i used a whisk like you can see in the picture below, and while you are whisking your bananas , turn on your oven so that it is very well heated by the time your banana bread batter is ready.
Once your banana is mashed fine, (its ok if they are still small banana lumps) add in your eggs and whisk to combine, next you will add in your vanilla extract and combine then set aside.
Next mix you butter and brown sugar until its well incorporated this should take about ten minutes, then add in the banana and egg mix, combine all together till you get a nice consistency.
Now add in your flour in bits, baking powder, nutmeg and cinnamon powder , combine all of these together till you get a very even looking batter like in the picture below, once this is achieved, proceed to pouring your batter into your prepared pan( coat your pan with butter and flour to help your bread come out easily).
Bake your banana bread in your pre-heated oven for 40minutes , make sure a tooth pick dipped in the middle of the bread comes out clean then you know your bread is ready and at this point your entire house will be smelling of this delicious aroma that can bring your neighbors’ rushing to your house,
Take your time to allow your moist banana bread to cool after you bring it out of the oven , before slicing it, i know the temptation is there but just a few more minutes and you can devour it.
To store your banana bread just slice it up and wrap it up completely and store in the fridge or freezer, this can stay in the freezer for up to 2 months, when ready to eat it, bring it out of the freezer to thaw at room temperature.
