Pancakes are my own way of making weekends so memorable , i serve them with fresh fruits, hot cups of cocoa and just indulge myself and my family in some quality time, spending time together over meals is a sure way to bond and have fun.
Before you make these pancakes , make sure you read through this recipe very well as i have a secret ingredient to give them that fluffy texture and thickness, you wouldn’t want to skip any part, so lets dive right into the recipe.
INGREDIENTS
2 Cups of all purpose flour
1 Cup of milk
1 Egg
1 Teaspoon nutmeg
1 Teaspoon vanilla extract
1 Teaspoon cinnamon
1/2 teaspoon Baking soda
4 Tablespoon sugar
A pinch of salt
1/2 Cup melted butter
COOKING DIRECTIONS
In a large bowl, mix together all of the dry ingredient, make a well in the middle and add in all of your wet ingredients, give this a good stir till its all combine but still has a few lumps , make sure you dont over mix your batter.
Next you will place a sauce pan over low heat( nits very important that your heat is low so you dont burn your pancakes) and spray with cooking spray or rub some butter onto the pan.
Gently scoop some of your pancake mix into the pan and watch till you begin to see bubbles at the edge, at this point you can flip your pancakes and cover the pan so that the pancakes have room to rise up and cook faster.
Please do not leave your pancakes unattended to, you must keep an eye on them to ensure they come out well.
Uncover your pan after about 1 minute and your delicious, fluffy pancakes should be ready, at this point i always tear the very first pancake up and enjoy it while i keep making the rest from the batter, so you can do same(laughs) repeat same process till your pancake mix is finished, this should give you about 8 medium size pancakes and trust me after taking two you will be so full .
If you are not a fan of cinnamon you can take it out of the recipe and use just nutmeg and vanilla and that will work just fine, and you can increase the sugar or decrease it depending on your taste buds, and that is it, super easy and delicious and if i must add its also a crowd pleaser .
