So today am keeping the post short and straight to the point. Puff puff is a popular Nigerian street snack, it’s very soft, sweet and deep fried to perfection, it’s a snack that both kids and adults alike enjoy so well, also no Nigerian party is complete without it as it always makes its way to the small chops stand.
This snack can be very addictive and I don’t blame anyone cos once you have had a taste of it, you will keep going back for more.
Personally while I was pregnant with my first time child it was all that I craved and there was this woman on my way to the hospital that Fry’s puff puff, chai you need to see me queuing up for puff puff, and the woman was so kind that she would attend to me first because of my huge belly before anyone else. As much love as I have for it, i have always been scared of making it because I heard a lot of stories about it not coming out right.
After so many attempts at making it and ending up with pancake looking stuff, i finally nailed it and I haven’t stopped making it since then. This recipe am showing you today is fail proof, just make sure your follow it exactly and in no time you will be a pro at making one of Nigeria’s most popular snack.
Vegetable oil for frying
2teaspoon active dry yeast
2cups of warm milk (mix your powder Milk with warm water)
Note- the milk or water you are using must be warm not hot, this step is the most important as it could make or break your mixture, the water should be warm enough to give to a child to drink, when you touch it you shouldn’t feel hot at all just warm please.
Take a large bowl and pour in all the dry ingredients, mix very well and then gently pour in your milk or water and mix till you get a mixture that is neither too thick nor running, it should look like the picture below. After mixing, take a kitchen towel and cover the bowl, place in the warmest part of your house, usually while mixing I turn on my oven and turn it off once am through mixing and just keep the bowl inside the oven. Allow it to rise for about 45mintues, when you open it, there would be bubbles on top and it would have doubled in quantity, just use your hand or a spoon and mix it again to let out all the trapped air.
Place a deep pot on medium heat and pour in about 1litre of vegetable oil, allow to heat up for at least 10minutes,test your oil but scooping some of the batter into it and see if it floats back up, if it does then your oil is hot enough, if not just allow it heat up some more.
Using a soup spoon or cooking spoon, scoop the batter into the oil carefully, allow it to fry for about 1minute and flip so the other side can get brown as well, take them out of the oil and strain in a filter, pick one and throw into your mouth so you enjoy the fruit of your labour. Repeat same process till you are out of batter, if you are like me, eat half in the kitchen while it’s still very hot and serve the rest.
