Cooking dinner can be so tiring on days when you are exhausted from work and not having the physical strength to cook lots of meals, but you still want to have a delicious home cooked meal.
My go to quick fix is pasta! It’s so easy and versatile plus its super filling too. This chicken stir fry pasta is a hit and you should definitely try it out, so let’s start cooking.
INGREDIENTS
Chicken breast cut into stripes
Garlic and ginger
Onion
Pasta (spaghetti)
Green peppers
Red pepper
Green peas
Seasoning cube
Chicken stock
Vegetable oil
DIRECTIONS
Boil your pasta according to directions on the pack and set aside, cut all vegetables into stripes, mince 2 large garlic.
Put your chicken into a bowl and marinate with onion, thyme, curry, garlic and ginger puree, salt and seasoning then set aside for 2 hours.
While your chicken is done marinating , in a large sauce pan pour 2 tablespoon of vegetable oil and add the chicken, stir and allow to cook till all the chicken turns from pink to brown.
Next add in your minced garlic and sliced onions , stir to combine and add the rest of the veggies , stir on high heat , add salt and seasoning to taste , stir ,stir and stir till all is well incorporated .
Add in 1 cooking spoon of chicken stock and your cooked pasta, give this a very good stir , and allow to simmer together for 3 minutes , dinner is ready guys , simple , quick and delicious.
