Beefdodo is a special nigerian sauce that is made with well seasoned and deep fried beef and plantains, mixed up and a rich tomatoes sauce filled with lots of colour veggies, it pairs so well with white rice, potatoes chips, pasta, boiled yams and even bread, this is a perfect alternative to tomatoes stew, and if you are looking for a sauce with lots of character this is just right up your alley!
There is a very popular Nigerian sauce that is very similar to this and its called gizdodo, made from gizzards and plantains too and equally very yummy.
If you love ripe plantain and all the sweetness that comes with it when deep fried then of course you will love this, the well seasoned beef cut in bite sizes , deep fried to perfection and the plantains that are deep fried too all mixed with tomatoes sauce and mixed veggies is the perfect dish for any given day, its colorful, easy , fast and so delicious.
As the name sounds its a mix of beef and dodo( deep fried plantain) , you can prep all the ingredients and just whip up this yummy goodness when you need it and that will help reduce the cooking time and without delay lets get straight into the recipe.
Beef( cut into bite sizes)
Tomatoes, pepper, onions( blend and cook till dry of liquid and set aside)
Ripe plantains (dice and set aside)
Carrots ( diced)
Green pepper diced
spring onions diced
red pepper diced
salt& seasoning cubes
curry and thyme
Garlic and ginger minced
Vegetable oil 1/2 litre
PREP THE BEEF
In a small sauce pan , put the beef and season using sliced onions, salt , seasoning cube, garlic and ginger, spring onions , curry and thyme powder and add some water to cook till meat is tender.
Once meat is tender , strain from the stock and deep fry until golden brown and set aside.
PREP THE PLANTAIN
Cut the ripe plantain into cubes , season with salt and deep fry till golden brown and set aside, its important to do these so that putting the sauce together becomes very easy and fast.
MAKE THE SAUCE
In a large cooking pan , add 1 cooking spoon of vegetable oil, and add in sliced onions and garlic to it , like you can see in the picture, and cook this on medium heat. Once the onion and garlic are fragrant, add in the tomatoes and pepper mix, stir to combine .
Next you add in salt and seasoning to taste, curry and thyme powder and stir to combine, this tomatoes base is very crucial to the final taste you will get so its important that you make this base very well, cover the sauce and cook till oil floats on top.
Once the tomatoes sauce is dry and oil floats on top, add in the fried beef, stir to mix into the sauce, and then add in the fired plantain , combine all of these very well and allow to cook for two minutes, then its time for the mixed veggies, this part gets me all excited, the mix of colours and textures just gets me so happy.
Combine all the mixed veggies( green pepper, spring onions, carrots, red peppers) and give it a very good stirring, leave to cook for just abut 3 minutes and your beefdodo is ready to be enjoyed!
I served mine with boiled white rice and it was so yum, hubby said he felt like he was dinning in a 5 star restaurant! yes it tastes that good and you too can get compliments like this.
